Spicy Thai Peanut Dip

Curried Peanut Dip

Ingredients:

  • 1 tablespoon avocado oil
  • 1/4 cup red curry paste
  • 1 can (14 oz) full-fat unsweetened coconut milk
  • 1/2 cup creamy peanut butter
  • 3 tablespoons rice vinegar
  • 1 tablespoon fish sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1/4 cup soy sauce
  • 1 clove garlic, grated
  • 1-inch piece fresh ginger, minced
  • Juice of 1/2 lime
  • 2 teaspoons sriracha (adjust to taste)

Instructions:

  1. Cook Aromatics:
    • Heat 1 tablespoon of avocado oil in a saucepan over medium-high heat.
    • Add 1/4 cup of red curry paste and cook for about 1-2 minutes until fragrant.
    • Grate one clove of garlic and mince a 1-inch piece of ginger. Add them to the saucepan.
    • Pour in the entire can of coconut milk (including the liquid on top) and whisk everything together.
  2. Make the Sauce:
    • Remove the saucepan from heat.
    • Add the remaining sauce ingredients:
      • 1/2 cup peanut butter
      • Juice of 1/2 a lime
      • 1 tablespoon sesame oil
      • 1 tablespoon fish sauce
      • 2 tablespoons honey
      • 2 teaspoons sriracha
      • 3 tablespoons rice vinegar
      • 1/4 cup soy sauce
    • Whisk until smooth and well combined.
  3. Adjust and Serve:
    • Taste the dip and adjust the seasoning according to your preferences. You can add more honey for sweetness or more sriracha for extra heat.
    • Serve this flavorful dip with colorful veggies, rotisserie chicken, or even crispy sweet potato fries.
