Spicy Thai Peanut Dip
Curried Peanut Dip
Ingredients:
- 1 tablespoon avocado oil
- 1/4 cup red curry paste
- 1 can (14 oz) full-fat unsweetened coconut milk
- 1/2 cup creamy peanut butter
- 3 tablespoons rice vinegar
- 1 tablespoon fish sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1/4 cup soy sauce
- 1 clove garlic, grated
- 1-inch piece fresh ginger, minced
- Juice of 1/2 lime
- 2 teaspoons sriracha (adjust to taste)
Instructions:
- Cook Aromatics:
- Heat 1 tablespoon of avocado oil in a saucepan over medium-high heat.
- Add 1/4 cup of red curry paste and cook for about 1-2 minutes until fragrant.
- Grate one clove of garlic and mince a 1-inch piece of ginger. Add them to the saucepan.
- Pour in the entire can of coconut milk (including the liquid on top) and whisk everything together.
- Make the Sauce:
- Remove the saucepan from heat.
- Add the remaining sauce ingredients:
- 1/2 cup peanut butter
- Juice of 1/2 a lime
- 1 tablespoon sesame oil
- 1 tablespoon fish sauce
- 2 tablespoons honey
- 2 teaspoons sriracha
- 3 tablespoons rice vinegar
- 1/4 cup soy sauce
- Whisk until smooth and well combined.
- Adjust and Serve:
- Taste the dip and adjust the seasoning according to your preferences. You can add more honey for sweetness or more sriracha for extra heat.
- Serve this flavorful dip with colorful veggies, rotisserie chicken, or even crispy sweet potato fries.
